I just invented the best ever recipe for school lunch boxes!!! My kids absolutely LOVED these - and they literally tick all of my boxes.
Oats and sunflower seeds are cheap as, with a solid nutritional profile. As far as grains go, oats are my favourite - they are fairly gentle on the gut (unless you have high gluten sensitivity or are coeliac - the protein in oats, avenalin, has a similar make up to gluten and can cause issues for people who are highly sensitive) (1). Oats are super versatile too, you can use it as flour, porridge (or better yet - Zucchini Oats!), homemade granola, or in your bliss balls.
This recipe was whipped up (and cleaned up) in under 10 minutes. I recommend making a double batch if you're a busy mum like me, because it will save you time later. I've got recess snacks sorted for the week.
Aside from the simplicity of this recipe, using whole food plant based ingredients, adding in the Complete Plant Based Protein really gives these snacks a nutritional boost. High in essential nutrients like vitamin C, calcium, B12 and Vitamin D, as well as containing all 9 essential amino acids, this is my preferred protein powder for kids (and for me too).
You can sub for another plant protein brand - just make sure that it's suitable for children, as many of them are not, due to unnatural food flavourings, fake sugars and an unhealthy high level of isolated protein.
